Career guidance starts with the student. Once you know what someone enjoys, how they think and what they're good at, choosing subjects, courses and careers gets a lot less like guessing.
Most students pick their subjects at 14 or 15. Often it's because a friend took that subject, a parent pushed for it, or the job at the end sounded impressive. Two or three years later plenty of them are stuck in a stream they don't like, and switching isn't easy.
